Hi

there are a few studies in the science literature. I've experimented by putting sources of food in bottle caps so there's no way dissolved material can affect the behavior, it seems physarum can't smell oats. In the published work, it's sensitive to some volatile organics - valerian attracts it by odour, there are compounds in orange peel that also attract.

The original paper is here - it looks at chemotaxis rather than airborne molecules but its a good starting point.
