What's the best way to get a timelapse of slimemold growth?

What's the best way to get a timelapse of slimemold growth? I know they grow better in the dark, so I'd hesitate to illuminate them at all times for camera footage. Any ideas of best cameras, best timelapse softwares for phones, or other ideas for getting a good timelapse? What have people done in the past? Thanks!

Hi 

Low lighting works OK (about a 1 sec exposure on slr with open aperture). Flash is also good - I've got a couple of Canon eos-m running Magic lantern ( hacked firmware) with mains adapters and flashes plus a nikon d3100 with intervalometer. Second hand with a kit lens they're not too pricey. Usb cams can be useful too. 

Processing I'm using Hitfilm Express. 

For mobile, I've yet to find a tl ap that will operate the flash. I tried writing one in Tasker but still couldn't get the flash to fire
