slime molds and probiotics and lactic acid bacteria

The top side is Yakult milk, below is water. slime molds didn't find the oat in Yakult immediately.

What's the best way to get a timelapse of slimemold growth?

What's the best way to get a timelapse of slimemold growth? I know they grow better in the dark, so I'd hesitate to illuminate them at all times for camera footage. Any ideas of best cameras, best timelapse softwares for phones, or other ideas for getting a good timelapse? What have people done in the past? Thanks!
