I rehydrated some daywalker slime three days ago and it's been healthy and active, but I got it out to look at this morning and it has split into two separate slimes and headed off in different directions away from the food I put in. Both new slimes are healthy and I have no idea why they would want to split, they weren't even particularly big. If anyone has an idea why please let me know

That's slimes for you. They also rejoin quite readily. If the food is fresh, maybe it's little dry, if it's been in there a few days it might have a touch of yeast growth putting them off.

It's just as likely there's no good reason for it - you can rely on physarum to go the wrong way down the maze, escape, die or  host of other things that you didn't want it to do.
